Sweet Pickle Recipe
Ingredients:
- 16 cups mix of chopped cucumbers (discard 1/16” slice from blossom end), silverskin onions, and chopped cauliflower.
- 24 cups boiling water
- 1.5 cups pickling salt
- 6 cups white pickling vinegar
- 6 cups water
- 9 cups sugar
- 0.625 cups mixed pickling spice (I just use Club House brand)
Instructions:
Day 1:
- Sprinkle 1.5 cup salt over vegetable mix
- Add the 24 cups of boiling water
- Let stand overnight
Day 2:
- Boil a syrup of:
- 6 cups water
- 6 cups vinegar
- 3 cups sugar
- 0.625 cup pickling spices, tied in cheesecloth bag
- Drain and rinse the vegetable mix well
- Place vegetable mix in crock and cover with syrup
Day 3:
- Drain liquid into pot
- Add 1.5 cups sugar to the drained syrup and bring to a boil
- Pour over vegetable mix
Day 4:
- Drain liquid into pot
- Add 1.5 cups sugar to the drained syrup and bring to a boil
- Pour over vegetable mix
Day 5:
- Drain liquid into pot
- Add 1.5 cups sugar to the drained syrup and bring to a boil
- Pour over vegetable mix
Day 6:
- Drain liquid into pot
- Add 1.5 cups sugar to the drained syrup and bring to a boil
- Pour over vegetable mix
- Seal into jars
