Tilapia tacos with kiwi salsa

Made this #recipe the other night, and it was damned tasty. Worth capturing, I thought.

The fish was tilapia marinated in sweetened condensed coconut milk with a dollop of Thai red chili paste, a couple tablespoons of lime juice, a tablespoon of chopped garlic, a teaspoon of ground ginger, and a few drops of Penzey’s orange extract. Broiled/roasted in the marinade for about 13 minutes @ 400 in a shallow pan.

The salsa that went with it was three yellow kiwis, peeled and chopped, two tablespoons of finely chopped yellow onions, two tablespoons of Penzey’s Pico Fruta, and a half teaspoon of lime juice. Stir together and let it stew in the fridge overnight.

Anyway, yellow kiwi and pico fruta works very well together. It just needed a little lime, as the yellow kiwis are pretty dang sweet.

Ingredients: 2 tilapia fillets 1 can sweetened condensed coconut milk 1 Tbsp Thai red chili paste 2 Tbsp lime juice 1 Tbsp chopped garlic 1 tsp dried ground ginger 4 drops orange extract

3 golden kiwis 2 Tbsp finely chopped yellow onions 2 Tbsp Pico Fruta ½ tsp lime juice
